What's for dinner? I love cooking but I'm still learning to put together a meal. With a friend's prompt, I have decided to share my meal ideas with you since it has taken me a long time to put together a full meal with protein, grain and vegetables.
Lemon Rosemary Chicken - Marinated 8-10 pieces of chicken with 1/4 cup olive oil, juice of 1 lemon, 2 sprigs of fresh rosemary, 2 cloves of minced garlic. Cut 2 lemons in quarters and put in the plastic bag that you will marinade the chicken in overnight for full flavour. Bake at 350 degree oven for 40 mins (just watch til it's done).
Smashed Red Potatoes - Boil red nugget potatoes in salted water til done (10-15 mins). Remove and put on baking sheet. Smash red potatoes with a fork and dot with butter and season with
garlic sea salt. Bake in 350 degree oven for 10 mins til crispy on top.
Vegetable Medley - Add frozen corn, peas, and one chopped carrot in the red potato water. Boil for 5 mins til cooked. Drain. Season as you prefer.
