Sunday Night Dinner: Lentil Stew Recipe

My travelling friend from Spain taught me how to make this simple yet delicious hearty stew.  There are few ingredients but cooked together on slow heat, the flavors blend together nicely.  It's hearty and a little will be enough to fill you up.  It makes plenty so I'll be freezing a container, bringing one for my brown bag lunch, and having leftovers for dinner. 

Lentil Stew Recipe
1 onion, chopped
4 large tomatoes, grated
4 cloves of garlic, minced

Cook the onions in a pot on low heat until they are soft, then add the garlic and tomatoes and stew on low for about 45 minutes.  You'll have a lovely fresh tomato sauce as the base.



While it's cooking you can prepare the following and boiling water.  Add the pork rib bones, smokies, and lentils to the tomato base.  Add enough boiling water to cover.  Bring to a boil and simmer for 45 minutes. 

5 chorizo/ italian smokies
1 lb pork rib bones
1 cup green lentils

 Add 2 handfuls of white rice to the stew and cook for at least 15 minutes (might be longer depending on consistency).  Basically you will see the soup go from liquid to stew-like consistency.  That's when you turn off the heat.  The smokies simmer and cook whole but I cut them into bite size pieces before serving.
