Brown Bag Lunch Challenge Day 4 - Egg Salad Sandwich Recipe

I am so thankful that it's a short workweek.  It's a hot September summer and not the best conditions for cooking in the kitchen.  Needless to say I have limited my time in the kitchen and baking of any sort is out of the question for now.  Back to the basics with a simple and proteinful egg salad sandwich recipe.

Egg Salad Sandwich Recipe
Cook 1-2 eggs in boiling water til hard boiled approximately 8-10mins.  Rinse in cold water.  Store in the fridge until morning.  Peel the eggs and mash in a bowl, add mayonnaise, salt and pepper to taste.  Put egg salad between two slices of multigrain or oat bread.
