Easy Korean Chicken Soup Recipe

I went to visit a friend one day after work and his Korean roommate came home and started cooking a simple and cheap soup.  I call this a "Korean" Chicken Soup because he's Korean but I'm not sure if you'll find this in any recipe book.  I was amazed at how quick and simple it was.  I was hesitant that it'd taste any good, but it was a healthy and delicious soup that can be made in under 30 minutes.   It's great if you think you are catching a cold because the garlic alone will make you healthy again.

6-8 chicken thighs (1/2 a family pack - as students they buy their meat at Price Smart in Coquitlam)
10 whole garlic cloves (he freezes them whole to maintain freshness and longevity)
3 chopped green onions (put in before serving)
salt and pepper for taste

Throw everything in a pot with water.  Boil and simmer for 30 minutes.  Season with salt and pepper and serve.  Serve alone or with rice.

Variation would be to boil and evaporate most of water and then put in Korean red pepper paste with the chicken for a main dish.  Serve with rice.
