Tonight I tried muffin-tin meat loaves because I like the idea of individual portion sizes. It was quite simple to make and doesn't take long to cook. That surprised me because I wasn't even finished my sides of mashed yams and steamed green beans when the meat loaves were already done.
1.5lbs extra lean ground beef
1.5 cups shredded zucchini
1 egg
3/4 cups bread crumbs
1tsp Italian seasoning
ketchup for topping
Heat oven to 400 degrees F. In a large bowl combine all ingredients except ketchup. Mix lightly and fill in muffin tins. Leave space on tap to spread ketchup. Bake for 20 mins. Be careful you'll be done dinner faster than usual.
