2 slices of oat bread (or any bread that you have on hand)
1 egg (cooked overeasy so it doesn't run when you eat the sandwich)
1 thin slice of cheese (havariti or your preference - optional)
salt and pepper to taste (optional)
dash of cooking oil and dab of butter
Heat up your frying pan and put in the oil. Cook your egg over easy. I put a slice of cheese as this was cooking up for extra flavour (optional). When the egg is almost ready, put two slices of bread in the toaster.
When the toast is ready, spread the dab of butter and sliced avocado (I like to mush the avocado a bit into the toast), then add your over easy egg on top and the other slice of toast. That's it! You have an easy breakfast sandwich at home. No fork necessary.
