Healthy Every Week Challenge: Eat Breakfast at IHOP

Happy new year! Week 1 of the January Healthy Eating Challenge is to eat breakfast. Luckily for me the first week has two days of holidays as I'm notorious for skipping breakfast on work days.  Even though it's better to eat breakfast at home, I splurged to start off the new year.  Bonus was that IHOP emailed me with a birthday coupon for a free meal so I used that to eat a healthy breakfast.

I choose the Garden Stuffed crepe which is filled with scrambled eggs, spinach, mushrooms, onions, and topped with diced tomatoes and hollandaise sauce.  The crepes are light and fluffy and the portion size is healthy so you will be full.  I had a glass of pure squeezed orange juice to quench my thirst.
