Weeknight Chicken Dinner Recipe


I had the Monday blues at work wishing it was Family Day in BC as half of the country had the day off. But when I came home I didn't have the blues any longer and made a gourmet meal that was worth the time.

Chicken legs were on sale so I bought a family package which included 4 chicken legs with thigh attached for just under $6.98. You'll see below that it turned into a gourmet chicken dinner.

Chicken Dinner Recipe

Rub chicken spice on the pieces.  Sear in a medium heat frying pan on both sides.  Bake in 375 degrees oven for 30 - 40 minutes or until cooked golden brown. 


Mashed Potatoes
Boil potatoes until tender with a fork.  Mash with milk, butter, and goat cheese until smooth.

Mushroom Pear Gravy
Drain the excess oil from the frying pan and add 1/2 cup chicken stock and fry 6-8 sliced mushrooms and 1 sliced ripe pear.  Simmer on low until mushrooms and pears are fully cooked for the gravy.  Add cornstarch to thicken the gravy. 


Blanched Broccoli
Put a head of broccoli in the boiling potato water until it turns dark green.  Remove and stop the cooking by rinsing with cold water.  Chop broccoli into bite size pieces and saute in butter on medium heat. 

There you have a delicious weeknight chicken dinner that's worth staying home for.   Enjoy!
