Cheddar Cheese Scones


It's day 3 of the February Healthy Eating on a Budget Challenge where I will attempt to spend $100/week on groceries for 2 people. This naturally leads to more homemade cooking and baking.

This weekend we are preparing for a winter camping trip so I baked some Cheddar Cheese Scones to bring along with us. I searched on google and found the Dairy Goodness website and the recipe which I have modified slightly as below.

Cheddar Cheese Scones
1 1/2 cups (500 ml) all-purpose flour; 1/2 cup whole wheat flour
4 tsp (20 ml) baking powder
1/2 tsp (2 ml) salt
1/4 cup (60 ml) cold butter
1 cup (250 ml) shredded Canadian old Cheddar 
1 cup (250 ml) milk

Topping:
1/2 cup (125 ml) shredded Canadian old Cheddar cheese

Instructions

Preheat oven to 350 °F.
In large bowl, sift together flour, baking powder, and salt. Cut in butter until mixture is crumbly. Stir in cheese. Pour in milk; stir with fork until soft, sticky dough forms.
Turn out dough onto lightly floured surface and shape into 3/4-inch (2 cm) thick square. Cut into 2-inch (5 cm) squares or rounds and place, touching each other, on ungreased baking sheet.
 
Topping:
Sprinkle with cheese. Bake for 12 to 15 min or until golden.
