Healthy Every Week Challenge: French Omlette

I love hot breakfasts. I'm not a big fan of cereal so it's not surprising that I'm attempting to cook breakfast at record speeds. Okay, in reality, it doesn't take that long to make a hot breakfast at home.

Today my inspiration came from Julia Child's French Omlette's which can be made in minutes.  I added the tangerine slices and buttered whole wheat toast to make the perfect workday breakfast.

French Omlette
2 eggs, beaten
pinch of parsley and asiago cheese

Heat up non-stick small frying pan on medium low.  Add the eggs and keep stirring them like scrambled eggs.  The key is to keep the eggs moving and not to overcook.  As you can see in the photo, the omlette is soft and you add the parsley and cheese last.
