I was planning to bring leftover lentil salad for lunch but decided that would leave me farting around the office. So I started looking for something fresh and found this Classic Carrot Salad from Simple Recipes. I omitted the raisins and added a teaspoon of fresh lemon juice to prevent the apples from browning. Simple ingredients can make a tasty and healthy salad for lunch. I'll complement the salad with the stone wheat crackers.
