October Brown Bag Lunch Challenge: BBQ Pork Udon Stirfry

Sometimes I crave BBQ Pork so I go to my local Asian supermarket for tasty BBQ Pork. I intended to make soup but didn't have enough soup stock so instead transformed it to Udon stirfry. This was great because stirfry is easier to pack to work than soup.

2 pks udon
1/2 pkg baby bok choi
1 tbsp oil
1/2 chopped red onion
2 carrots, sliced
1 pkg BBQ pork
1 cup soup stock
1/4 cup hoison sauce or to taste

First I boiled the udon in the soup stock. Heat up wok, add oil, stirfry onion and carrot. Add udon with spoonful of soup to wok. Add hoison sauce. Add baby bok choi and BBQ pork slices. Stir fry and mix so it doesn't stick to the pan. Add more stock and hoison as needed to make sauce. Serve and enjoy.
